Among the leanest of freshwater fish the Northern Pike is also know as the Jax or Jackfish is a large predator fish and puts up a great fight when fishing. They tend to be bony and we do remove the Y-bone, but there might be a few bones here and there. The pike's flesh is firm and flaky. It's also known for its excellent keeping qualities and many people pickle and can it.
For a long time the only pike we could get were caught in Canada, frozen, then shipped, filleted and packed in China. In 2017 we decided against carrying them anymore so we went without. Now we are finally able to provide Canadian caught and Canadian filleted northern pike.
