Tempura Battered Rainbow Smelt - 11 pounds.  Box contains a plastic bag with all the smelt so you can take whatever quantity you need. 

Wild caught Great Lakes rainbow smelt (osmerus mordax) number 1 quality, headless, cleaned and quick frozen. Smelt are medium sized but grading for smelt is a bit rough and varies so I'm not giving measurements. 

Get the fryer ready for a smelt fry. They are prebreaded so that saves a step in the cooking process. 

Cooking Recommendation: Deep fry. Preheat to 365 degrees F and cook for about 3 mins or desired shade of brown.

Love the tempura batter over the beer batter. Nice taste, keeps smelt moist. Excellent choice. When you recently depleted your smelt supply and I was unable to find a comparable replacement.

These are small smelt in a great batter that crisps up nicely in an air fryer or hot oil. Dip them In your favorite kind of sauce and you’ll be smiling!
