Ritz Cracker Walleye Tacos

Ingredients
- 4 walleye fillets
- 16 Ritz Crackers
- ⅔ cup Panko breadcrumbs
- ⅓ cup all-purpose flour
- 2 eggs
- 2 teaspoons blackened seasoning, or to taste
- 2 cups shredded green cabbage
- 3 tablespoons mayonnaise
- 2 tablespoons lime juice
- Pinch of salt
- ⅛ teaspoon celery seed
- Frying oil
- Taco-size flour tortillas
- Sliced ripe avocado
- Fresh cilantro
- Pickled sliced jalapenos
- Hot sauce or salsa
Instructions
- In a bowl, combine the shredded cabbage, mayonnaise, lime juice, salt to taste and celery seed. Cover and chill.
- Place the Ritz crackers in a zip-top bag and crush with a rolling pin. Pour the crushed crackers into a wide bowl and combine with the Panko breadcrumbs and blackened seasoning; taste and adjust. Beat the eggs in another bowl, and add the flour to a third bowl.
- In a frying pan, heat 1 inch of oil to 325°F. Lightly coat the walleye in flour, then egg, then the Ritz cracker mixture, gently pressing the coating onto the fish. Fry until golden on both sides, flipping halfway through. Drain on paper towels and keep warm while you fry the rest.
- Break the fish into smaller pieces and serve on warmed tortillas with the slaw, sliced avocado, cilantro, pickled jalapenos and hot sauce or salsa.
