This is the "old" way we used to sell walleye for 12 years and some prefer this method. This means that each fillet is frozen by itself with a light water only glaze on it and stored together in a plastic bag inside a cardboard box. Restaurants prefer this way and this is how they are usually sold on the market.

How it tastes
Walleye are regarded as the best tasting freshwater fish in the world prized by anglers for its tender flaky meat. It is not very fishy.
Ways to cook
One of the best ways to cook walleye is by pan-searing it until golden brown, which enhances its natural taste. Baking walleye with lemon slices and fresh herbs is another excellent method. Grilling walleye also works wonderfully, giving it a smoky and slightly charred taste.
