I grew up in Wisconsin so I know there isn't just one type of cheesecurd and I wanted to offer another option that the homestyle curds we already have. So I've tested about 15 different varieties (tough job - I know) and this was the choice to add. I describe them as more "cheddary" than the usual cheese curds. They are a yellow cheddar curd and slightly smaller with that salty cheese taste you expect. Most curds are one bite, but the big ones you want two bites to savor them a little more. So for customers that want a little more cheddar in their cheese curds this is my fully tested and approved option.
