We just had the last of our frozen bluegill. The way we cook it is:

 

Soak the bluegill filets in salt water for 1 hour

4 eggs mixed in with cup of milk

2 cups of flour and 2 cups of Corn meal mix together

 

We use butter flavored Crisco in a frying pan.

 

Heat ( on high) until grease is smoking a bit.

 

Dip filets in Egg mix then dip in corn meal and flour

 

Cook for about 5 minutes until golden brown and then turn for other side about 2 minutes.

 

This is AWESOME!!!
